So, when I start a new paragraph when typing up a post (ie. make a space between two paragraphs) it doesn’t show up in the actual post on my web site.

Any ideas?

Check the formatting for the Body field. That’s the dropdown below, and to the right, on the Publish (or Edit) screen. It sounds like yours is set to None. You want it set to XHTML. Just change that dropdown, hit Update, and there you go - paragraph breaks.

To set things up so every new entry’s body content automatically uses XHTML formatting, go to Admin | Site Administration | Custom Fields | Add / Edit Custom Fields. Click on the name of the field you want to change - probably Body, in this case. Where the screen says “Default Text Formatting for this field”, choose “XHTML” from that dropdown menu, then hit “Update”.
